Here’s a recipe for award-winning barbecued beef ribs that you can try:

Ingredients:

  • 2 racks of beef ribs (about 4-5 pounds total)
  • Dry Rub:
    • 1/4 cup brown sugar
    • 2 tablespoons paprika
    • 1 tablespoon black pepper
    • 1 tablespoon salt
    • 1 tablespoon chili powder
    • 1 tablespoon garlic powder
    • 1 tablespoon onion powder
    • 1 teaspoon cayenne pepper (adjust to taste)
  • Barbecue Sauce:
    • 1 cup ketchup
    • 1/4 cup apple cider vinegar
    • 2 tablespoons Worcestershire sauce
    • 2 tablespoons brown sugar
    • 2 tablespoons Dijon mustard
    • 1 tablespoon honey
    • 1 tablespoon molasses
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon smoked paprika
    • Salt and black pepper to taste

Instructions:

  1. Preheat your grill or smoker to 225°F (107°C) for indirect cooking.
  2. In a small bowl, combine all the dry rub ingredients: brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder, and cayenne pepper. Mix well.
  3. Prepare the ribs by removing the membrane from the bone side of the racks. Season the ribs generously on both sides with the dry rub mixture, pressing it into the meat.
  4. Place the seasoned ribs on the grill or smoker bone side down. Close the lid and let them cook low and slow for about 4-5 hours, or until the meat is tender and pulls away from the bones.
  5. While the ribs are cooking, prepare the barbecue sauce. In a saucepan, combine all the barbecue sauce ingredients: ketchup, apple cider vinegar, Worcestershire sauce, brown sugar, Dijon mustard, honey, molasses, garlic powder, onion powder, smoked paprika, salt, and black pepper. Simmer the sauce over low heat for about 10-15 minutes to allow the flavors to meld together. Adjust the seasonings according to your taste.
  6. During the last 30 minutes of cooking, baste the ribs with the barbecue sauce on both sides, using a brush or mop. Apply multiple layers of sauce, allowing each layer to set before adding the next.
  7. After basting, close the grill or smoker and let the ribs cook for the remaining time.
  8. Once the ribs are done, remove them from the heat and let them rest for a few minutes. This allows the juices to redistribute within the meat.
  9. Slice the ribs between the bones and serve them hot with additional barbecue sauce on the side.
