This recipe is simple and easy. You can double the recipe or add any vegetable you like.

It’s fast, easy, and good for you. You can also use cauliflower pizza crust and = substitute mozzarella cheese with ricotta cheese.

  • 1 Udi’s gluten-free frozen pizza crusts (you can find gluten-free crust at Healthy Planet or other large supermarkets)
  • 4 Tbsp extra virgin olive oil (EVOO) – divided
  • 1 cup sliced baby Bella mushrooms
  • 1 clove minced garlic
  • 1 cup shredded mozzarella cheese
  • 1 cup arugula
  • 2 tsp fresh lemon juice

INSTRUCTIONS

  1. Preheat the oven to 375 degrees (if using a different pizza crust, follow the instructions on the package).
  2. Place frozen pizza crust on a pizza pan and brush with 2 Tbs EVOO.
  3. In a large pan add 2 Tbsp EVOO and mushrooms.
  4. Saute over medium heat for 5-6 minutes until softened.
  5. Add garlic and saute for about 1 minute.
  6. Spread mozzarella cheese over pizza crust.
  7. Top the cheese with mushrooms and garlic.
  8. Bake 10-12 minutes until the crust is cooked to desired crispiness.
  9. In a small bowl add arugula and lemon Juice. Mix well.
  10. Top pizza with arugula, slice, and serve.
  11. Drizzle with balsamic glaze if desired.
  12. Enjoy!
