Ingredients:

  • Grilled chicken breast, sliced
  • Fresh arugula
  • Radicchio, thinly sliced
  • Grapefruit segments
  • Avocado, diced
  • Toasted walnuts, chopped
  • Fresh mint leaves, torn

Dressing:

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon freshly squeezed grapefruit juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  • In a small bowl, whisk together the olive oil, grapefruit juice, honey, mustard, salt, and pepper to make the dressing.
  • In a large salad bowl, combine the arugula, radicchio, grapefruit segments, avocado, and grilled chicken.
  • Drizzle the dressing over the salad and toss gently to coat.
  • Sprinkle with toasted walnuts and torn mint leaves before serving.
