Here’s a recipe for homemade hollandaise sauce.

Ingredients:

  • 3 large egg yolks
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 cup unsalted butter, melted and hot
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper (optional)

Instructions:

  1. In a blender or food processor, combine the egg yolks and lemon juice. Pulse until smooth and frothy, about 10-15 seconds.
  2. With the blender or food processor running on low speed, slowly pour in the hot melted butter in a thin, steady stream until the sauce thickens and emulsifies. This should take about 30 seconds to 1 minute.
  3. Add the salt and cayenne pepper (if using) and pulse for a few more seconds to combine.
  4. Taste the hollandaise sauce and adjust the seasoning as needed.
  5. Serve immediately or keep warm in a double boiler or thermos until ready to use.

Homemade hollandaise sauce is the perfect topping for eggs benedict, asparagus, and other brunch dishes. Enjoy!
