Ingredients:

1 lb. white fish fillets (such as cod or haddock)

1 tsp. ground cumin

1 tsp. ground coriander

1 tsp. paprika

1/4 tsp. cayenne pepper

1 tsp. salt

1/4 tsp. black pepper

1 large onion, finely chopped
-
2 tbsp. olive oil
-
1/4 tsp. saffron threads
-
1/2 cup boiling water
-
1/4 cup lemon juice
-
1/4 cup chopped fresh parsley

1/4 cup chopped fresh cilantro
Instructions:

In a small bowl, combine the cumin, coriander, paprika, cayenne pepper, salt, and black pepper. Mix well.

Pat the fish fillets dry and rub the spice mixture all over them.

In a large skillet, heat the olive oil over medium-high heat. Add the onion and cook until softened about 5 minutes.

Add the fish fillets to the skillet and cook for about 5 minutes on each side, or until cooked through.

In a small bowl, dissolve the saffron threads in the boiling water.

Add the saffron water and lemon juice to the skillet. Cook for another 2-3 minutes, until the sauce thickens slightly.

Sprinkle the parsley and cilantro over the fish, then serve hot.
