Ingredients:

  • 1 lb. white fish fillets (such as cod or haddock)

  • 1 tsp. ground cumin

  • 1 tsp. ground coriander

  • 1 tsp. paprika

  • 1/4 tsp. cayenne pepper

  • 1 tsp. salt

  • 1/4 tsp. black pepper

  • 1 large onion, finely chopped

  • 2 tbsp. olive oil

  • 1/4 tsp. saffron threads

  • 1/2 cup boiling water

  • 1/4 cup lemon juice

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh cilantro

Instructions:

  1. In a small bowl, combine the cumin, coriander, paprika, cayenne pepper, salt, and black pepper. Mix well.

  2. Pat the fish fillets dry and rub the spice mixture all over them.

  3. In a large skillet, heat the olive oil over medium-high heat. Add the onion and cook until softened about 5 minutes.

  4. Add the fish fillets to the skillet and cook for about 5 minutes on each side, or until cooked through.

  5. In a small bowl, dissolve the saffron threads in the boiling water.

  6. Add the saffron water and lemon juice to the skillet. Cook for another 2-3 minutes, until the sauce thickens slightly.

  7. Sprinkle the parsley and cilantro over the fish, then serve hot.
