Ingredients:

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 4 cups organic vegetable broth

  • 1/4 teaspoon saffron threads

Instructions:

  4. Bring the soup to a boil, then reduce the heat and let it simmer for 20-30 minutes.

  5. Season the soup with salt and pepper to taste.

  6. Serve the soup hot, garnished with fresh parsley.
