For those who can’t do grains, this salad is packed with healthy fats, protein, and antioxidants from the chicken, avocado, and vegetables. The saffron threads add a subtle but delicious flavour and potential health benefits such as boosting mood and reducing inflammation.

Ingredients:

  • 2 organic chicken breasts, cooked and sliced

  • 2 ripe avocados, sliced

  • 1 organic cucumber, diced

  • 1 organic red bell pepper, diced

  • 1/4 cup fresh cilantro, chopped

  • 1/4 cup slivered almonds

  • 1/4 cup olive oil

  • 2 tablespoons lemon juice

  • 1/4 teaspoon saffron threads

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the sliced chicken, sliced avocado, diced cucumber, diced red bell pepper, and chopped cilantro.

  2. In a small bowl, whisk together the olive oil, lemon juice, saffron threads, salt, and pepper to make the dressing.

  3. Pour the dressing over the salad and toss to combine.

  4. Sprinkle the slivered almonds over the top of the salad and serve.
