Here’s a recipe for a healthy salad with protein that incorporates saffron:

Ingredients:

  • 1 cup organic quinoa

  • 2 cups organic chicken broth

  • 1/4 teaspoon saffron threads

  • 2 organic chicken breasts, cooked and sliced

  • 1 organic red bell pepper, chopped

  • 1/2 red onion, chopped

  • 1/2 cup fresh cilantro, chopped

  • 1/4 cup slivered almonds

  • 1/4 cup organic olive oil

  • 2 tablespoons lemon juice

  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa in a fine mesh strainer, then place it in a pot with the chicken broth and saffron threads. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the quinoa is tender and the liquid has been absorbed.

  2. In a large bowl, combine the cooked quinoa, sliced chicken, chopped red bell pepper, chopped red onion, and chopped cilantro.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

  4. Sprinkle the slivered almonds over the top of the salad and serve.

This salad is high in protein, fibre, and healthy fats, making it a satisfying and nutritious meal. The saffron threads add a delicious flavour and aroma to the quinoa, while also potentially helping to boost metabolism and reduce appetite.
