Ingredients:

  • Ahi tuna steak, seared and thinly sliced
  • Belgian endive, leaves separated
  • Orange segments
  • Fennel bulb, thinly sliced
  • Baby spinach
  • Toasted pine nuts

Dressing:

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon freshly squeezed orange juice
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon finely grated orange zest
  • Salt and pepper to taste

Instructions:

  • Whisk together the olive oil, orange juice, balsamic vinegar, honey, orange zest, salt, and pepper to make the dressing.
  • In a large salad bowl, combine the endive leaves, orange segments, sliced fennel, baby spinach, and seared tuna.
  • Drizzle the dressing over the salad and toss gently to coat.
  • Sprinkle with toasted pine nuts before serving.
