A nutrient-packed salad with crunchy roasted pumpkin seeds and tender massaged kale.

Ingredients:

  • 1 bunch of kale, stems removed and leaves chopped
  • 1/4 cup roasted pumpkin seeds (pepitas)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 cup dried cranberries (optional)
  • 1/4 cup crumbled goat cheese (optional)
  • Salt and pepper to taste

Instructions:

  1. Massage the chopped kale with olive oil and lemon juice until the leaves soften and darken.
  2. Toss in roasted pumpkin seeds, cranberries, and goat cheese if desired.
  3. Season with salt and pepper to taste and serve immediately.

Pro Tip: Toast the pumpkin seeds with a pinch of smoked paprika for extra flavour.
