Ingredients (organic when possible):
- 2 cups red grapes
- 1–2 tsp olive oil
- Pinch sea salt
- 1 cup ricotta
- 1–2 tsp honey (optional)
- 8–12 crostini or gluten-free toasted bread
- Optional: crushed pistachios or fresh thyme
Instructions:
- Heat oven to 400°F / 205°C.
- Toss grapes with olive oil + sea salt. Spread on a baking sheet.
- Roast 15–20 minutes until skins blister and juices deepen.
- Whisk ricotta with honey until fluffy.
- Spread ricotta on crostini, top with roasted grapes.
- Finish with pistachios or thyme.
Tip:
If serving gluten-free guests, toast slices of gluten-free baguette or seed bread.
