Organic Herb-Roasted Chicken with Root Vegetables

Ingredients:

  • 4 organic, free-range chicken breasts, bone-in, skin-on
  • 2 organic carrots, peeled and chopped

  • 1 organic turnip, peeled and cubed
  • 1 large organic onion, quartered
  • 4 cloves organic garlic, minced
  • 3 tablespoons organic olive oil

  • 2 teaspoons fresh organic thyme, chopped
  • Salt and freshly ground black pepper, to taste
  • 1/2 teaspoon organic paprika (optional for a little smokiness)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Vegetables:
    • In a large roasting pan, toss the carrots, parsnips, turnips, and onion with 2 tablespoons of olive oil, half of the minced garlic, salt, and pepper. Spread them out evenly at the bottom of the pan.
  3. Season the Chicken:
    • In a small bowl, mix the remaining olive oil with the rosemary, thyme, remaining garlic, and paprika (if using). Rub this mixture all over the chicken breasts.
    • Season the chicken breasts with salt and pepper to taste.
  4. Roast the Chicken and Vegetables:
    • Place the seasoned chicken breasts skin-side up on top of the vegetables in the roasting pan.
    • Roast in the preheated oven for about 45-55 minutes, or until the chicken is golden brown and cooked through, and the vegetables are tender and caramelized.
