These muffins are a great snack for kids, combining the flavours of fall with nutritious ingredients.
Ingredients:
- 2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup honey or maple syrup
- 1 cup pumpkin puree
- 2 eggs
- 1/4 cup vegetable oil
- 1/4 cup unsweetened applesauce
- 1 apple, peeled and finely chopped
- 1/2 cup walnuts or pecans, chopped (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a bowl, mix the flour, baking soda, salt, and cinnamon.
- In another bowl, whisk together the honey, pumpkin puree, eggs, oil, and applesauce.
- Combine the wet and dry ingredients until just mixed. Fold in the chopped apple and nuts.
- Spoon the batter into the muffin tin. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
