These muffins are a great snack for kids, combining the flavours of fall with nutritious ingredients.

Ingredients:

  • 2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup honey or maple syrup
  • 1 cup pumpkin puree
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1/4 cup unsweetened applesauce
  • 1 apple, peeled and finely chopped
  • 1/2 cup walnuts or pecans, chopped (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, mix the flour, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the honey, pumpkin puree, eggs, oil, and applesauce.
  4. Combine the wet and dry ingredients until just mixed. Fold in the chopped apple and nuts.
  5. Spoon the batter into the muffin tin. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
