A colourful and healthy salad that can be prepared in advance.

Ingredients:

  • 4 carrots, peeled and sliced
  • 3 beets, peeled and cubed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Mixed greens
  • Optional: feta cheese, pumpkin seeds

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Toss the carrots and beets with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25-30 minutes until tender and slightly caramelized.
  4. Let cool, then toss with mixed greens, and add feta and pumpkin seeds if desired.
