A quick and nutritious meal that’s easy for kids to eat on the go.
Ingredients:
- 2 medium sweet potatoes, cooked and mashed
- 1 can black beans, rinsed and drained
- 1 tsp cumin
- Salt and pepper to taste
- Whole wheat tortillas
- Grated cheese (optional)
Instructions:
- Mix the mashed sweet potatoes with black beans, cumin, salt, and pepper.
- Spread the mixture onto half of each tortilla. Sprinkle cheese over if using.
- Fold the tortillas over and cook on a skillet over medium heat until golden on both sides and the cheese has melted.
- Cut into wedges and serve warm.
