A quick and nutritious meal that’s easy for kids to eat on the go.

Ingredients:

  • 2 medium sweet potatoes, cooked and mashed
  • 1 can black beans, rinsed and drained
  • 1 tsp cumin
  • Salt and pepper to taste
  • Whole wheat tortillas
  • Grated cheese (optional)

Instructions:

  1. Mix the mashed sweet potatoes with black beans, cumin, salt, and pepper.
  2. Spread the mixture onto half of each tortilla. Sprinkle cheese over if using.
  3. Fold the tortillas over and cook on a skillet over medium heat until golden on both sides and the cheese has melted.
  4. Cut into wedges and serve warm.
